We went to Mallorca in September, staying at Port de Pollenca but travelling all over the island in a hire car. Lots of walking and sightseeing! It’s an amazingly beautiful island away from the big resorts.

I made this recipe up after seeing “halloumi kibi” on The Gate’s menu. I googled some tikka recipes to find one that sounded right and worked out the rest.
